Hummus with Roasted Garlic and Parmesan
serves 4

Ingredients

Instructions

  1. Remove the skins from the chickpeas, then mash in a food processor. Add the garlic, oil, tahini, parmesan, pepper, cumin and lemon juice and process until creamy. Add the reserved chickpea juice and process for 1 minute. Season to taste and add oil or more chickpea juice if needed to achieve desired consistency.
  2. Plate, garnish with olive oil, and serve.
