Hummus with Roasted Garlic and Parmesan
serves 4
Ingredients
- 1 ea 15-oz can chickpeas, rinsed and drained (reserve 1/4 C liquid)
- 4 cl garlic, roasted, chopped
- 1/4 C olive oil
- 1/4 C tahini, stirred well
- 1/4 C parmesan cheese, grated
- 1/4 t black pepper
- 1/4 t cumin
- 2 T lemon juice
Instructions
- Remove the skins from the chickpeas, then mash in a food processor. Add the garlic, oil, tahini, parmesan, pepper, cumin and lemon juice and process until creamy. Add the reserved chickpea juice and process for 1 minute. Season to taste and add oil or more chickpea juice if needed to achieve desired consistency.
- Plate, garnish with olive oil, and serve.
